Hand-picked at peak ripeness, the cherries undergo the natural dry process, the oldest and most traditional method of coffee processing.After harvesting, the whole cherries are spread out to dry under the sun without removing any fruit pulp. They are dried intact, skin, pulp, mucilage, and all. Which allows the beans inside to slowly absorb the natural sugars and fruity compounds from the cherry. Over several days to weeks, depending on weather, the cherries are carefully turned by hand to ensure even drying, prevent mold, and develop the desired flavor intensity.
