Grown organically and hand-picked at peak ripeness, the cherries undergo the honey process. A method that sits between washed and natural processing.After harvesting, the cherries are carefully de-pulped, but unlike washed coffee, the sticky fruit mucilage (the “honey-like” layer) is intentionally left on the beans. They are then spread out and slowly sun-dried with this mucilage still attached, allowing the natural sugars to oxidize and caramelize over several days. Throughout drying, the beans are turned frequently by hand to prevent over-fermentation and to ensure even moisture loss.
